Over the last three months, Tom and I have eliminated sweets as a regular part of our eating. I still love sweets (indeed I do), but we came to realize that we needed to make some changes in our diet for the good of our health. As Easter approaches (even though sweets certainly do not have anything to do with the real meaning of Easter), this means I will forego the Easter basket goodies of Peeps and chocolate bunnies and those delicious little Cadbury eggs in the colorful candy shells. I will not miss the other Cadbury eggs that have the runny cream filling that resembles an egg yolk; my mother adored these and always tried to stock up when the candy went on sale after Easter. Not my favorite but definitely hers.
I'm cleaning out old files and still have the Teeny Tiny Cookbook that I made to give to each kid. Those classes were so fun and so exhausting! What messes we made! Lucy would come to the class and be a little smart aleck, putting flour on her face and generally being a cut up. Great memories. Thanks, Jeanne, for this little story and your kind words. Whenever my Daddy got a slice of any kind of dessert, if he didn't think it was an ample-enough serving, would say, "That's an awfully cute piece of _________!" 🤣 Carrot cake is not my favorite to make. . . too many ingredients and steps, but I think you should treat yourself to one piece for Easter!! ❤️
Okay, so I get the carrot cake but carrots dipped in hummus? Admittedly I have eaten hummus and have a container of roasted garlic hummus in my fridge right now. But it goes on crackers, Jeanne. Crackers! Now I am going to have to dip a carrot into it. Sigh!
I love carrots raw or cooked and I LOVE them in a good carrot cake. I do not like walnuts in my carrot cake. I love a good cream cheese icing to spread that sweetness around. Yes, Mrs. Givens made one of the all time best carrot cakes and yes she did favor me with an extra large slice and I never turned her down. Wonderful reflection. Thanks!
